Recipe – Make-Ahead Green Peanut Butter Smoothie from Gena Hamilton

Thank you Gena for sending us this really simple and delicious-sounding smoothie that would be a great pick-me-up in the middle of the day when you just need a little boost of energy! And so simple to make a batch to freeze for the whole week.

Below is my favorite mid-morning snack during remote work. It is a great way to sneak in some greens.

Ingredients:

  • 1 container of prewashed baby spinach
  • 1 cup frozen blueberries
  • 1 cup frozen pitted cherries
  • 3 bananas, peeled and diced
  • 6 tablespoons of peanut butter
  • Almond milk
  • Ice cubes

Steps:

  • Divide spinach, blueberries, cherries, bananas and peanut butter evenly into six 500ML glass mason jars.
  • Freeze until ready to use.
  • When ready to blend, add the contents of one mason jar to the blender with 1 cup almond milk and 4 ice cubes.

Tip: The riper the banana, the more banana-flavor and sweeter the smoothie.
