Thank you Holly for your submission. It sounds like a nice, fresh lunch for summer! And thank you for the cilantro substitution idea of mint. I too love cilantro, but I know it is one herb that many people don’t enjoy. The mint sounds interesting and I think it might also be good with parsley or basil.
I thought I’d join in the sharing fun. Please see attached a delicious salad recipe! It’s easy to prep for lunch the night before. Cilantro is my fave in this dressing but I’d like to try it with mint, too.
Ingredients:
2 handfuls of bitter greens: arugula, rocket, dandelion, endive, etc.
1 small carrot, grated
1 radish, grated
1 small cucumber, diced
½ red onion, diced
Place everything in a bowl.
Dressing:
1 lime, juiced
1 avocado, flesh of
1 Tbsp raw apple cider vinegar
1 pinch cayenne pepper
1 tsp unpasteurised honey (local is best!)
1 handful fresh soft herb: cilantro, basil, dill, etc.
¼ tsp sea salt
Directions:
add all ingredients to a blender or food processor and blend until smooth. Dump on your delicious salad ingredients and mix in.
Experience the magic! Easy to make the night before to take for lunch.
Special Note:
Onions and arugula (rocket) are high in sulfur, a beautifying mineral which cleanses the liver and skin. Additionally radishes and cucumber are high in silica, which is necessary for the strengthening and moisturizing of hair, skin and nails.
