Thank you Gena for sending us this really simple and delicious-sounding smoothie that would be a great pick-me-up in the middle of the day when you just need a little boost of energy! And so simple to make a batch to freeze for the whole week.
Below is my favorite mid-morning snack during remote work. It is a great way to sneak in some greens.
Ingredients:
- 1 container of prewashed baby spinach
- 1 cup frozen blueberries
- 1 cup frozen pitted cherries
- 3 bananas, peeled and diced
- 6 tablespoons of peanut butter
- Almond milk
- Ice cubes
Steps:
- Divide spinach, blueberries, cherries, bananas and peanut butter evenly into six 500ML glass mason jars.
- Freeze until ready to use.
- When ready to blend, add the contents of one mason jar to the blender with 1 cup almond milk and 4 ice cubes.
Tip: The riper the banana, the more banana-flavor and sweeter the smoothie.
