It sounds like a nice, fresh lunch for summer! And thank you for the cilantro substitution idea of mint. I too love cilantro, but I know it is one herb that many people don&#8217;t enjoy. The mint sounds interesting and I think it might also be good with parsley or basil.<\/strong><\/em><\/p>\n<p>I thought I\u2019d join in the sharing fun. Please see attached a delicious salad recipe! It\u2019s easy to prep for lunch the night before. Cilantro is my fave in this dressing but I\u2019d like to try it with mint, too.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 handfuls of bitter greens: arugula, rocket, dandelion, endive, etc.<br \/>\n1 small carrot, grated<br \/>\n1 radish, grated<br \/>\n1 small cucumber, diced<img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1277 alignright\" src=\"https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad-300x169.jpg\" alt=\"\" width=\"464\" height=\"261\" srcset=\"https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad-300x169.jpg 300w, https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad-1024x576.jpg 1024w, https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad-768x432.jpg 768w, https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad-1536x864.jpg 1536w, https:\/\/blogs.ufv.ca\/ufv-at-work\/files\/2021\/03\/skin-beauty-salad.jpg 1600w\" sizes=\"auto, (max-width: 464px) 100vw, 464px\" \/><br \/>\n\u00bd red onion, diced<\/p>\n<p>Place everything in a bowl.<\/p>\n<p><strong>Dressing:<\/strong><\/p>\n<p>1 lime, juiced<br \/>\n1 avocado, flesh of<br \/>\n1 Tbsp raw apple cider vinegar<br \/>\n1 pinch cayenne pepper<br \/>\n1 tsp unpasteurised honey (local is best!)<br \/>\n1 handful fresh soft herb: cilantro, basil, dill, etc.<br \/>\n\u00bc tsp sea salt<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>add all ingredients to a blender or food processor and blend until smooth. Dump on your delicious salad ingredients and mix in.<\/p>\n<p>Experience the magic! Easy to make the night before to take for lunch.<\/p>\n<p><strong>Special Note: <\/strong><br \/>\nOnions and arugula (rocket) are high in sulfur, a beautifying mineral which cleanses the liver and skin.
